On the Family Island of the Bahamas where sheep and goats are reared fresh mutton is a delicacy. For quicker more tender meat use a pressure cooker or crock-pot.<\/span><\/p>\n<p><span style=\"color: #000000;\">Ingredients:           \r\n            <div class=\"onp-locker-call\" style=\"display: none;\" data-lock-id=\"onpLock661514\">\r\n                <p><\/span><\/p>\n<p><span style=\"color: #000000;\">5 lbs\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0 Mutton, cut into small cubes<\/span><\/p>\n<p><span style=\"color: #000000;\">1 lrg\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0 Onions<\/span><\/p>\n<p><span style=\"color: #000000;\">1 lrg\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0 Green bell pepper<\/span><\/p>\n<p><span style=\"color: #000000;\">5 cloves\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0 Garlic, diced<\/span><\/p>\n<p><span style=\"color: #000000;\">\u00bd tsp\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0 black pepper<\/span><\/p>\n<p><span style=\"color: #000000;\">1 tsp\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0 Salt<\/span><\/p>\n<p><span style=\"color: #000000;\">\u00bc cup\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0 Lime juice<\/span><\/p>\n<p><span style=\"color: #000000;\">1 tsp\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0 Thyme<\/span><\/p>\n<p><span style=\"color: #000000;\">2 tbsp\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0 Cooking oil<\/span><\/p>\n<p><span style=\"color: #000000;\">3 tbsp\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0 Tomato Paste<\/span><\/p>\n<p>&nbsp;<\/p>\n<p><span style=\"color: #000000;\">Preparation:<\/span><\/p>\n<p><span style=\"color: #000000;\">Wash mutton and leave to soak in limejuice and salt for 30 minutes then wash again. Put in boiling water and cook for 1 hour then drain.<\/span><\/p>\n<p><span style=\"color: #000000;\">Saut\u00e9 onion, green pepper, garlic and thyme until brown. Add tomato paste and allow to brown then add mutton stirring for 2 minutes and cover with water.
