{"id":69,"date":"2017-02-15T16:31:03","date_gmt":"2017-02-15T16:31:03","guid":{"rendered":"http:\/\/recipesfrombahamas.com\/bahamas_recipes\/?p=69"},"modified":"2017-02-15T16:31:03","modified_gmt":"2017-02-15T16:31:03","slug":"bahamian-steam-chicken","status":"publish","type":"post","link":"https:\/\/recipesfrombahamas.com\/bahamas_recipes\/bahamian-steam-chicken\/","title":{"rendered":"BAHAMIAN STEAM CHICKEN"},"content":{"rendered":"<p><span style=\"color: #000000;\">BAHAMIAN STEAM CHICKEN<\/span><\/p>\n<p><span style=\"color: #000000;\">In The Bahamas when we use the word steam in front of a meat or fish item please be advised that this has a whole different look, and preparation that it sounds like, but it is truly delicious.<\/span><\/p>\n<p><span style=\"color: #000000;\">Ingredients:           \r\n            <div class=\"onp-locker-call\" style=\"display: none;\" data-lock-id=\"onpLock323889\">\r\n                <p><\/span><\/p>\n<p>&nbsp;<\/p>\n<p><span style=\"color: #000000;\">3 lbs\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0 Chicken cut into serving size<\/span><\/p>\n<p><span style=\"color: #000000;\">\u00bd cup\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0 Cooking oil<\/span><\/p>\n<p><span style=\"color: #000000;\">1 med.\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0 Onion (sliced)<\/span><\/p>\n<p><span style=\"color: #000000;\">1 small\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0 Tomato (diced)<\/span><\/p>\n<p><span style=\"color: #000000;\">1 clove\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0 Garlic<\/span><\/p>\n<p><span style=\"color: #000000;\">1 small\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0 Green pepper<\/span><\/p>\n<p><span style=\"color: #000000;\">1 tsp\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0 Thyme<\/span><\/p>\n<p><span style=\"color: #000000;\">1 tbsp\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0 Tomato paste<\/span><\/p>\n<p><span style=\"color: #000000;\">salt and black pepper<\/span><\/p>\n<p><span style=\"color: #000000;\">\u00bd cup\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0 Lemon juice<\/span><\/p>\n<p><span style=\"color: #000000;\">1 cup\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0 Water<\/span><\/p>\n<p><span style=\"color: #000000;\">Preparation:<\/span><\/p>\n<p><span style=\"color: #000000;\">Wash and clean chicken with lemon juice or vinegar. Place cleaned chicken in a bowl and squeeze lemon juice over chicken. Sprinkle with salt and black pepper and let marinade for 30 minutes to 1 hour. Heat cooking oil in a frying pan at medium heat (oil should be at least \u00bd inch in depth. Fry chicken to a golden brown on both sides. Once all chicken have been fried, remove pan from heat pour off oil into a heat resistant container. Return pan to stove and pour 2 tablespoons of the oil back into the pan. Add onions, garlic, thyme and green pepper to frying pan. Sautee until tender then add tomatoes and tomato paste; cook until dissolved. Add water stirring to blend herbs. Place fried chicken into pan, salt and pepper to taste. Reduce heat and simmer with cover on for 15 minutes.<\/span><\/p>\n<p><span style=\"color: #000000;\">Serving Suggestions:<\/span><\/p>\n<p><span style=\"color: #000000;\">This chicken dish can be served over a plate of fluffy white rice, peas \u2018n rice, grits \u2018n rice along with plantain, coleslaw, potato salad, macaroni and cheese, avocado green salad or and vegetable combination. A nice tall glace of switcher (lemonade) or fruit juice to wash it down and slice of guava duff, coconut tart or rum cake will seal the deal.
