Set aside.<\/span><\/p>\n<p><span style=\"color: #000000;\"><strong><em><u>Tempura Batter<\/u><\/em><\/strong><\/span><\/p>\n<p><span style=\"color: #000000;\"><strong>Ingredients:<\/strong><\/span><\/p>\n<p><span style=\"color: #000000;\">2 eggs<\/span><\/p>\n<p><span style=\"color: #000000;\">1 pt. Sparkling water, cold<\/span><\/p>\n<p><span style=\"color: #000000;\">10 oz\u00a0 Flour<\/span><\/p>\n<ul>\n<li><span style=\"color: #000000;\">Sweet potato, approx. 8 oz.<\/span><\/li>\n<\/ul>\n<p><span style=\"color: #000000;\">8 oz\u00a0\u00a0 Broccoli florets<\/span><\/p>\n<p><span style=\"color: #000000;\">1 lb\u00a0\u00a0\u00a0\u00a0\u00a0 Mushroom, small, whole<\/span><\/p>\n<p><span style=\"color: #000000;\">1 lb\u00a0\u00a0\u00a0\u00a0\u00a0 Okra, small whole<\/span><\/p>\n<p><span style=\"color: #000000;\">2\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0 Cassava<\/span><\/p>\n<ul>\n<li><span style=\"color: #000000;\">Plantain<\/span><\/li>\n<\/ul>\n<p>&nbsp;<\/p>\n<p><span style=\"color: #000000;\"><strong>Preparation:<\/strong><\/span><\/p>\n<p>&nbsp;<\/p>\n<p><span style=\"color: #000000;\">Beat eggs and add water. Add flour to egg-water mixture. Mix until flour is blended. There should still be small lumps in the batter. Over mixing develops gluten, which is not undesirable.<\/span><\/p>\n<p><span style=\"color: #000000;\">Peel the sweet potato and cut into \u00bc inch thick slices. If potatoes are large, cut each slice in half. Peel cassava and cut into 1-inch length and \u00bc inch wedges. Peel plantain and cut 1 inch long and \u00bc inch thick slices. Wash okras and pat dry. Drop broccoli in boiling water for one minute, drain and pat dry on paper towels.<\/span><\/p>\n<p><span style=\"color: #000000;\">Drop the vegetables in batter a few at a time. then deep fry allowing them to swim around.<\/span><\/p>\n<p><span style=\"color: #000000;\">Remove them from the batter one at a time Cook until done. Remove and drain.<\/span><\/p>\n<p><span style=\"color: #000000;\">Arrange the tempura vegetables on a serving platter.
