{"id":135,"date":"2017-02-18T21:06:15","date_gmt":"2017-02-18T21:06:15","guid":{"rendered":"http:\/\/recipesfrombahamas.com\/bahamas_recipes\/?p=135"},"modified":"2017-02-18T21:06:15","modified_gmt":"2017-02-18T21:06:15","slug":"auntie-rie-coconut-tart","status":"publish","type":"post","link":"https:\/\/recipesfrombahamas.com\/bahamas_recipes\/auntie-rie-coconut-tart\/","title":{"rendered":"AUNTIE RIE COCONUT TART"},"content":{"rendered":"<p><span style=\"color: #000000;\">AUNTIE RIE COCONUT TART<\/span><\/p>\n<p><span style=\"color: #000000;\"><strong><em>Bahamian Sweet Pastry Dough:           \r\n            <div class=\"onp-locker-call\" style=\"display: none;\" data-lock-id=\"onpLock512185\">\r\n                <p><\/em><\/strong><\/span><\/p>\n<ul>\n<li><span style=\"color: #000000;\">cup shortening<\/span><\/li>\n<\/ul>\n<ul>\n<li><span style=\"color: #000000;\">cup butter or margarine 2 cups sugar<\/span><\/li>\n<\/ul>\n<p><span style=\"color: #000000;\">2 Eggs<\/span><\/p>\n<p><span style=\"color: #000000;\">2 teaspoons vanilla<\/span><\/p>\n<p><span style=\"color: #000000;\">3 teaspoons baking powder \u00bc cup evaporated milk<\/span><\/p>\n<p><span style=\"color: #000000;\">3 cups flour<\/span><\/p>\n<p><span style=\"color: #000000;\">3 tablespoons water (approx.)<\/span><\/p>\n<p>&nbsp;<\/p>\n<p><span style=\"color: #000000;\">Filling:<\/span><\/p>\n<p><span style=\"color: #000000;\">3 cups coconut, grated fine (blender may ber used 1cup sugar 1 \u00bd cups water<\/span><\/p>\n<p><span style=\"color: #000000;\">2 teaspoon vanilla<\/span><\/p>\n<p><span style=\"color: #000000;\">1 teaspoon nutmeg<\/span><\/p>\n<p><span style=\"color: #000000;\">Preparation:<\/span><\/p>\n<p><span style=\"color: #000000;\">Prepare filling by combining all ingredient into a sauce pan over medium heat. Bring to a boil then reduce heat and allow to simmer for about 10 minutes or until liquid evaporates and begins to dry. Allow to cool while you prepare dough.<\/span><\/p>\n<p><span style=\"color: #000000;\">Cream shortening and butter until blended. Add sugar, eggs and vanilla &#8211; mix well. Add baking powder and milk; mix. Combine flour and gradual amounts of water &#8211; just enough to hold dough together. Knead dough until stiff enough to roll out. Divide into 4 pieces. Roll out two pieces to fit each a 9 in. pie dish. Fill pie shells with coconut filling. Roll out each of remaining dough and cut into \u00bd wide strips. Lay half the strips (of dough #3) across the filling about 1 inch apart. Lay the remaining strips crosswise to form a lattice pattern. Repeat for second pie. Bake at 350 degrees for about 45 minutes or until golden brown.<\/span><\/p>\n<p><span style=\"color: #000000;\">This is a wonderful Bahamian Christmas dessert. One that the whole family will love.
