Well, every Bahamian knows if it\u2019s jelly it goes in the water, but if it\u2019s hard it goes in dessert. The perfect complement to this cake is a tall glass of coconut water and milk.<\/strong><\/span><\/p>\n<p>&nbsp;<\/p>\n<p><span style=\"color: #000000;\"><strong>Ingredients:           \r\n            <div class=\"onp-locker-call\" style=\"display: none;\" data-lock-id=\"onpLock701560\">\r\n                <p><\/strong><\/span><\/p>\n<p><span style=\"color: #000000;\">2 cup\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0 Flour<\/span><\/p>\n<p><span style=\"color: #000000;\">2\u00bd tsp\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0 Baking powder<\/span><\/p>\n<p><span style=\"color: #000000;\">\u00bd tsp\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0 Salt<\/span><\/p>\n<p><span style=\"color: #000000;\">1 \u00bc\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0 Sugar<\/span><\/p>\n<p><span style=\"color: #000000;\">2\/3 cup\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0 Vegetable shortening<\/span><\/p>\n<p><span style=\"color: #000000;\">3\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0 Eggs<\/span><\/p>\n<p><span style=\"color: #000000;\">1 tsp.\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0 Vanilla<\/span><\/p>\n<p><span style=\"color: #000000;\">1- 1\u00bd cup\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0 Fresh coconut, finely chopped<\/span><\/p>\n<p><span style=\"color: #000000;\">\u00be cup\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0 Coconut milk<\/span><\/p>\n<p><span style=\"color: #000000;\"><strong>Preparation:<\/strong><\/span><\/p>\n<p><span style=\"color: #000000;\">Sift dry ingredients together. Cream shortening; add sugar gradually; cream together until light and fluffy. Add unbeaten eggs one at a time, beating thoroughly after each addition. Add vanilla &amp; coconut. Add dry ingredients alternately with coconut milk, stirring only to blend. Bake in 2 8&#8243; layer cake pans at 350\u00b0 20-25 minutes. Frost layers with confectioner&#8217;s powdered sugar creamed with margarine or butter, dash of salt and vanilla, thinned with more coconut milk &amp; generously filled with chopped or coarsely grated coconut.
